Keto Honey Garlic Pork Bites by Carolyn Ketchum

This will be a regular meal on our dinner rotations. Everyone loved it. I found the pork to be a bit tough, so I will use the kitchen mallet to tenderize them prior to cutting in the future.

Keto Korean Beef with Zucchini Noodles by Carolyn Ketchum

My family was a little mixed on this receipe, but it was favored for the most part. The oldest thought the ginger was too strong and youngest said it was too sweet. I’ll tweek the recipe for them next time.

Seared Venison Tenderloin by Hank Shaw

Our oldest son has had a heart for animals since he was a little thing, so I was rather surprised when he took up the sport of hunting last fall. As an exceptional sportsman, he proved to be an excellent marksman and hunter. I was grateful for the relief to our grocery bill, but lacked enthusiasm when it came time to prepare or eat the venison. That is no longer true. We enjoy Quesadillas quite often using ground venison, and I now have a palatable method of preparing the tenderloin. I slightly modified Hank Shaw’s recipe as I wanted to ensure the venison was well-done, but still tender. I also cut the proportion of sauce to 1/2 from Hank’s receipe since we had plenty left over.

Chipotle Lime Chicken by Carolyn Ketchum

I prepared the marinade from this recipe, but I’m not a fan of chicken thighs. So I chopped 4 chicken breast into bite sizes pieces. Soaked them in the marindade for about an hour (I was short on time). Then I fried them over medium-high heat until the bites were seared. Everyone loved it paried with cilantro-lime rice.

Note: For my family, prepare 1 chicken breast per person to ensure leftovers for lunch.
