I fell in love with Subway’s Birthday Party Cookie.  No, it doesn’t taste like birthday cake.  It’s a special berries & white chocolate cookie Subway whipped up to celebrate its 47th birthday.  I couldn’t find a recipe online, so I set out to make my own rendition by modifying  this Trisha Yearwood<\/a>‘s recipe. <\/em>Nailed it!<\/p>\r\n<\/div><\/div>\r\n\r\n\r\n\r\n

Ingredients<\/h2>\r\n\r\n\r\n\r\n

1\/2 cup unsalted butter, softened<\/p>\r\n\r\n\r\n\r\n

1\/2 cup packed light brown sugar<\/p>\r\n\r\n\r\n\r\n

1\/2 cup granulated sugar<\/p>\r\n\r\n\r\n\r\n

1 tablespoon vanilla extract<\/p>\r\n\r\n\r\n\r\n

1 large egg<\/p>\r\n\r\n\r\n\r\n

1 1\/2 cups all-purpose flour<\/p>\r\n\r\n\r\n\r\n

1 1\/2 teaspoons baking soda<\/p>\r\n\r\n\r\n\r\n

1\/2 cup dried cranberries<\/p>\r\n\r\n\r\n\r\n

1\/2 cup dried blueberries<\/p>\r\n\r\n\r\n\r\n

1 cup white chocolate chips<\/p>\r\n\r\n\r\n\r\n

Directions<\/h2>\r\n\r\n\r\n\r\n

Preheat the oven to 350 degrees F. <\/p>\r\n\r\n\r\n\r\n

Line 2 baking sheet with parchment paper.<\/p>\r\n\r\n\r\n\r\n

With an electric mixer, cream the butter and both sugars together until smooth.<\/p>\r\n\r\n\r\n\r\n

Add the vanilla and egg, mixing well. <\/p>\r\n\r\n\r\n\r\n

Sift together the flour and baking soda. <\/p>\r\n\r\n\r\n\r\n

Spoon the flour mixture gradually into the creamed sugar mixture. <\/p>\r\n\r\n\r\n\r\n

Stir in the cranberries, blueberries and white chocolate chips. <\/p>\r\n\r\n\r\n\r\n

Drop by heaping spoonful (about 2 tablespoons) onto the prepared baking sheets, 2 inches apart. <\/p>\r\n\r\n\r\n\r\n

Bake one sheet at a time 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.<\/p>\r\n","protected":false},"excerpt":{"rendered":"
